Today we speak to chef Marco Niccoli.

I was born in San Diego, California and am now living in Salt Lake City, Utah. I come from an Italian family of all boys, there are 5 of us and my dad had restaurants in Los Angeles called “Bruno’s Old World Italian Deli”. I knew from day one that I wanted to be a Chef, food has always been my passion!

About three years ago I met the women of my dreams (she is a chef) and together we started to change the way people around us look at food. We work a lot together catering high-end private parties, teaching private cooking classes and doing “Pop Up” restaurants all over the country. We both have two beautiful kids from previous marriages, which means we have four kids under 7 years old together! They are amazing and round out our ‘Apron Squad’.

Before Traeger I worked as the Executive Chef at Culinary Crafts, one of the most respected catering agencies in the U.S., producing over 500 events annually, the majority of which are outdoors. I was recognized as one of the Fab 50 (youngest Executive Chefs in the state) and led the team that won the ICA Caterer of the Year in 2013. I was also the keynote speaker at “The Art of Catering” global conference in Denver Colorado, and last year was one of five global chefs selected to do the launch party for a new Toyota model for 2,000 people.

Now that I am working for Traeger Grills, where I am their Global Culinary Director, I get to travel the world sharing my passion and teaching people how to cook with the natural flavor of hard wood. I couldn’t be more stoked about bringing people together around amazing food!

Today we meet Derrick Turner, head bartender at Harding's in New York City on his career and personal style.
Growing up in New York City, I’ve noticed that being from here gives you a distinction like no other. It allows you to interact in ways that you may not have, in let’s say mid America… in my opinion. The city has its own aura that everyone wants to be apart of but few have the opportunity to really feel it. New York is the bright light in the middle of the darkness, and the closer you get to it the less you can see or feel. But then you get a zap, and some make it out but most fall down beaten. This is what it feels like to work in an industry that is easy to get into but hard to conquer. 
Tending bar is one of those professions that you have to love in order to get it done correctly. You need to have a sort of obsession if you want it work for you. Yes, we’ve seen the hot bartender that can barley make a vodka soda, or the tender that seems angrier then the room vibe feels. The reason for this is tending is merely a mid point in their lives, and simply a bump in their road. 
For almost 11 years I have been tending. I got started to take care of student loans like most kids do right out of college. Time went on and something happened. I finally got it. The ratios between sweet and savory. The complexity of a single malt whiskey. It just… clicked and I knew I was either going to try and exploit the industry as a simple way of making bank, or I was going to learn its ways and try to master them. Learning and continuing to do so is always gratifying.  

Throughout the years I’ve done it all. Clubs, lounges, restaurants, venues, but what stays constant is most people don’t know what they like. What I mean is they have a base line as to what they want, but overall their knowledge of cocktails and spirits are very limited. This is where it gets fun for me. I like to break what a person likes down to the T. Do you want something sweet, spicy, bitter, tangy? The basics. I then cater a cocktail to them on the spot. Now the guest just got a custom drink and if they love it, they WILL be back and talk about it to friends and family. This industry is all word of mouth. That’s why apps like Yelp do so well. People want to talk about their experiences. Why not try to make theirs, the BEST.

We spoke with Jordan Andino, owner of 2nd City and Executive Chef of The VNYL about his career and personal style.
My name is Jordan Andino I was born in Toronto, Canada and then moved to California with my mom when I was nine years old and I've been cooking in professional kitchens since the age of 10. I grew to love kitchens because my dad is a professional chef and and I've now spent my entire life in commercial kitchens. Using my dad's connections and my drive, I decided to pursue cooking as a professional career and have worked in some of the best kitchens in the US from Spago in Los Angeles, to the French laundry in Napa Valley.
I've now taken my love of cooking to partner with James and head the food program at the VNYL while also owning and operating a Filipino Taqueria in the West Village called 2nd City. I would say my brand has been and will always be youthful exuberance with a passion to grow and learn every day. My style is cool, collected, but not always calm because my fun and happy go lucky attitude sometimes get the best of me! See me in board shorts on a long board riding though New York City or in a three piece suit... but always ready have fun!
