If you somehow missed it, 2026 is America’s 250th birthday. To celebrate this momentous event, St. Louis, Missouri-based StilL 630 is releasing a new line of rare, single-barrel, bottled-in-bond bourbons crafted to celebrate the United States’ semiquincentennial.

StilL 630 Indomitable Spirit of America 250th Birthday Bourbon

Recently, the distillery launched the first in its series of Indomitable Spirit of America 250th Birthday Bourbons. The first release was launched on January 2 with additional releases scheduled for the first Friday of every month this year. Each release was created to pay tribute to a specific moment in American history. The first, unsurprisingly, is the signing of the Declaration of Independence in 1776.

Made with a mash bill of corn, barley, rye, and wheat, it’s matured for a minimum of five years in federally bonded warehouses. The result is a complex, nuanced, well-balanced 100-proof bourbon whiskey with aromas of caramelized sugar, honey, vanilla beans, oak, and gentle spices. The palate is centered on dried fruits, fresh leather, pipe tobacco, toasted vanilla beans, and charred oak. The finish is long, warm, and ends with a  mix of oaky wood and baking spices.

“As we prepare to celebrate 250 years of the American spirit, we wanted to create something truly special that honors our nation’s heritage while showcasing the artistry of American bourbon-making,” David Weglarz, founder and distiller of StilL 630, says.

“Each barrel in the  Indomitable Spirit of America 250th Birthday series is a celebration of craftsmanship, history,  and the pioneering spirit that defines both our country and our distillery.”

Where can I buy it?

Bottles of this special expression are available at the distillery or online the next day for the suggested retail price of $76 for a 750ml bottle.

Stetson. You know the name. You proudly wear the hats. Now get to know its bourbon. The launch has been a long time coming, resulting in a bottle and spirit worthy of the Stetson name. After a three-year journey of sourcing and tasting, Stetson found its ideal blender and two of the most respected bourbon producers in Kentucky, Green River Distilling Co. and Bardstown Bourbon Company.

Force of Nature is elevating the meat delivery game
Cookware, Skillet, Food

An old high school buddy recently hosted a boys’ weekend at his farm in Virginia. We spent two glorious days fishing, cooling off in swimming holes, and sipping whiskey at sunset. Before I headed back to New York, he sent me off with a box full of frozen venison. He had harvested the deer the previous fall, and a local game processor had turned it into sausages, backstrap, and steaks.

Back in Brooklyn, I seared the lean, ruby-red cutlets in French butter, spooned over a dollop of cherry jam, and paired them with a bottle of Daou Soul of a Lion. My girlfriend agreed: it was one of the finest—and healthiest—dinners I’ve ever cooked.

A new limited-edition tequila is bringing together two of Mexico’s most celebrated cultural traditions in a single bottle. Reserva de la Familia, the luxury tequila brand from Jose Cuervo, has unveiled Private Cask Collection Edition No. 2: Mole Cask, the first tequila finished in mole-seasoned barrels.

The release highlights the deep connection between Mexico’s culinary and distilling heritage. The tequila begins its journey in the agave fields surrounding Tequila, Jalisco, a UNESCO World Heritage Site recognized for its historic agave landscape and tequila production. It is then finished in barrels seasoned with mole, one of Mexico’s most iconic dishes and part of the country’s UNESCO-recognized Intangible Cultural Heritage of traditional cuisine.
