Just in time for National Pickle Day on November 14th, we’ve got a briny cocktail for the ages. No, it’s not a traditional Martini recipe. Instead, it’s one that takes advantage of mezcal and some vermouth (and pickle).
In case you haven’t read our agave spirits guide, there’s something you should know: Mezcal, tequila, and sotol are versatile. They can be mixed seamlessly into classic cocktails like a Negroni or an Old Fashioned. Need proof?
Here’s a great recipe from Mezcal Union that showcases the agave spirit’s nimble nature. It also takes advantage of the current pickle trend, slated to become even bigger than pineapple cocktail recipes. And with a Martini, a little pickle juice is more than welcome.

Pickle Martini

This is the epitome of a great three-ingredient cocktail. Chances are good that you probably just have this stuff in the fridge or pantry at home. Do play around with the garnishes. Mezcal Union recommends a pickle chip but you can also treat it like a good Bloody Mary recipe and throw some other savory things at it.
Ingredients:
- 1 1/2 ounces Mezcal Unión Uno
- 1 ounce pickle brine
- 1 barspoon (approx. 0.125 ounces) Dry Vermouth
Method:
- Stir all ingredients with ice and strain into a Coupe or Nick and Nora glass.
- Garnish with a pickle chip.
