If you’ve ever sipped a glass of wine and sworn you tasted cherries, tobacco, or even a hint of vanilla, you’re not alone. In fact, you’re right. The thing is, though, winemakers aren’t tossing handfuls of berries or shavings of cinnamon into fermentation tanks like they’re making sangria. So, how can wine — made from nothing but grapes, yeast, and time — end up tasting like a fruit salad with a spice rack chaser?
The answer is a blend of science, nature, and a touch of winemaking magic. During the wine fermentation process, chemical reactions create aromatic compounds — some of which are identical to those found in fruits, herbs, and spices. And depending on the grape variety, where it’s grown, and how it’s fermented or aged, those compounds can vary wildly. Let’s break it down.
Flavor compounds: A natural transformation

At its core, wine is fermented grape juice. Once fermentation begins, the transformation begins. Yeast, one of the star players in the winemaking process, consumes the sugar in the grapes and converts it into alcohol and carbon dioxide. But that’s just the start. This process also produces hundreds of aromatic compounds called esters, terpenes, and thiols, many of which are chemically identical to those found in other foods.
Esters, for example, are responsible for many of the fruity and floral notes in wine. Isoamyl acetate smells like bananas. Ethyl butyrate gives off a pineapple aroma. And ethyl hexanoate? That’s your green apple. These molecules aren’t exclusive to wine — they exist in the actual fruits too — but fermentation is what brings them to life in your wine glass.
Then there are terpenes, the same compounds that give lavender, rosemary, and citrus their distinct aromas. Certain grape varieties, like Gewürztraminer and Muscat, are naturally high in terpenes, which is why they tend to smell so intensely floral or perfumed. And thiols, which you’ll find in Sauvignon Blanc, are what lend wines their signature grapefruit, passionfruit, and even boxwood notes.
In short, wine doesn’t need any flavor additives. The grapes, through fermentation and a bit of chemistry, already contain everything they need to mimic an entire farmer’s market worth of aromas.
But it’s not just the chemistry

Of course, the flavor of a wine doesn’t just come from fermentation. The grapes themselves are the biggest player in wine’s flavor. Each grape variety has its own genetic makeup and chemical predisposition. Pinot Noir, for example, tends to be light-bodied with red fruit notes like cherry or raspberry. Syrah (or Shiraz) often leans darker, with blackberry, black pepper, and smoky aromas.

We already mentioned that yeast converts sugar into alcohol, but it also does something much more exciting. Yeast actively creates flavor.
There are hundreds of yeast strains, each with its own flavor personality. Some are more efficient at producing fruity esters. Others are known for enhancing texture or releasing subtle spice notes. Winemakers choose (or allow) specific yeasts not only for how well they ferment, but for how they shape the final aroma and mouthfeel of the wine.
In natural or biodynamic winemaking, some producers allow fermentation to happen spontaneously using wild yeasts already present in the vineyard or cellar. These native yeasts can create complex, sometimes unpredictable results, adding layers of flavor and a sense of place that’s unique to that vintage and location.
Oak aging: Vanilla, spice, and everything nice

Ever taste vanilla or toasted coconut in your wine? That’s oak talking.
If a wine has been aged in oak barrels, it picks up additional flavors from the wood. These include vanillin (hello, vanilla), lactones (which can give a coconut aroma), and phenols (which can taste smoky or spicy, like clove or cinnamon).
French oak tends to be more subtle and spice-driven, while American oak is known for bold vanilla and coconut notes. The level of toast on the barrel (how much it’s charred on the inside) also impacts the flavor. More toast equals more smoky, coffee-like notes. And the longer the wine stays in oak, the stronger these characteristics shine through in the wine.
The final blend: A flavor mosaic

Here’s the beautiful truth about wine: no single element defines it. Every glass is a mosaic built from its grape variety, terroir, fermentation chemistry, yeast strain, and aging vessel. All these components layer together to create something incredibly complex and completely unique.
A Cabernet Sauvignon aged in stainless steel will be vastly different from one aged in oak for 18 months. A cool-climate Riesling fermented with native yeasts will taste nothing like a warm-climate Riesling made with a neutral commercial yeast. The winemaker’s decisions — from harvest timing to blending — all affect how those flavors present themselves in the final product.
