Can you smell it? Spring is in the air. Never mind the seemingly endless winter in places like New York City, we’ve got flowers and fresh drinks on the mind.

Longer days require aromatic and light drinks. We’ve got a great cocktail recipe from Bols, which utilizes a very spring-friendly liqueur. It’ll be your go-to next time you’re hosting brunch or looking for something to make guests during a Mother’s Day celebration.

This one is a breeze to make. But do pay attention to your sparkling wine (go with something at least a little better than bottom shelf) and pay attention to your serving temperature (straight out of the cooler or fridge). And use a nice flute for presentation’s sake.

It’s spring break in a glass. And it’s great alongside lazy day food items like BLTs and pancakes. No need to batch it out as a large format cocktail as this one is a piece of cake to make individually.

Elderflower Royale

The name is regal but the process is as simple as they come. It’s a two-ingredient cocktail you can make in less than a minute. Now, you can beef it up a bit if you’d like, so consider also throwing in some bitters, a drop of amaro, or even a low-octane gin. But we think the simplest form might just be the best.

Ingredients:

  • Sparkling wine
  • 20 ml Bols Elderflower Liqueur

Method:

  1. Pour liqueur into glass and top with chilled sparkling wine.
  2. Garnish with some citrus.
