We’ve seen interesting barrel finishing in the whiskey world over the years. But what the distillers are doing at Green River Distilling just might be one of the most unique yet. That’s because the Owensboro, Kentucky-based brand is releasing a honey-finished bourbon. Yes, you read that right.

Green River Honey Finished Bourbon Whiskey

Green River Honey begins its life as a Kentucky straight bourbon that has matured for at least 4 years. This is where things get wild. The folks at Green River didn’t finish the whiskey in barrels that formerly held honey; they added locally-sourced, seasonally selected honey right into the barrels in a melding of honey and whiskey.

According to the brand, the result is a 92-proof, indulgent, memorable whiskey that opens with floral hints, honey, caramelized sugar, and candied orange peels. The palate is centered on vanilla beans, sweet honey, oaky wood, and cinnamon spice. The finish is long, warm, and ends with a mix of sweetness and spice.

“For too long, honey whiskey has been defined by shortcuts,” Dan Callaway, Master Blender, Lofted Spirits, says.

“Natural flavors’ aren’t always as natural as they claim to be.  Green River Honey is changing that – putting our money into real, natural honey and Kentucky Straight Bourbon. Its flavor and approachability open the Green River brand up to higher energy occasions, play well in a cocktail, and bridge a huge gap in the category between higher-priced honey-cask finishes and cheaper immature flavors.”

Green River Honey is available at whiskey retailers throughout the US at a suggested retail price of $24.99 per 750ml bottle.
