The way we see it, there’s no wrong time of year for a hoppy, pleasantly bitter West Coast IPA. This timeless beer style is just at home on a humid, sunny summer day as it is on a cold, dark winter evening. But since there are seemingly countless West Coast IPAs on the market, your best bet is to try some of the OGs.

What is a West Coast IPA?

For those unaware, the West Coast IPA first became popular in California in the 1980s (the Sierra Nevada Pale Ale is often associated with its rise). Known for its liberal use of hops like Cascade, Centennial, Citra, and Simcoe (among others), it’s beloved for its mix of malts, citrus, tropical fruit, and dank, resinous pine flavors. One of its major (and more divisive) characteristics is its bitter (sometimes aggressive) hop finish.

In the pantheon of classic West Coast IPAs, none is as beloved as Stone IPA. Brewed in 1997, it features Magnum, Chinook, Centennial, Azacca, Calypso, Ella, and Vic Secret hops. The result is a surprisingly balanced IPA loaded with flavors like cereal grains, lemon peels, tropical fruits, and dank pine. The finish is pleasantly bitter, leaving you craving more. Every fan of West Coast-style IPA knows this is the IPA all others strive to be.

Lagunitas IPA

Another California staple is Lagunitas IPA. Known for its effortlessly balanced flavor profile, it’s brewed with Crystal, Caramel, and Munich malts. Not as easy to find as any of the others on the list, Russian River Pliny the Elder is no less important to the West Coast IPA boom.  This year-round, 8% ABV West Coast IPA is brewed with Simcoe, Amarillo, Citra, Tangier, Nectaron, and CTZ hops. Beloved by IPA drinkers, it’s known for its balanced, full-bodied flavor profile featuring hints of ripe peach, tangerines, grapefruit, orange peel, lemongrass, caramel malts, and dank, cannabis-like pine. The finish is loaded with citrus and pine and ends with the perfect amount of hop bitterness. As West Coast IPAs go, this is as perfect as it gets.
